Fruity Rice Pudding

I expect you all know the recipe for the syn free rice pudding, but i thought i would post my version. I must admit i was very sceptical about a rice pudding made with cream soda and no milk or cream, but i have to admit it is very good!
I much prefer it cold with lots of fruit in it.
Although it is syn free on extra easy, please be careful because if you eat too much of it, it may affect your weight loss. If you find you aren't losing while having this delicious dessert it could be down to eating too much!

2 litres low calories or no added sugar cream soda
400g pudding rice
1 vanilla pod or 1 tsp vanilla extract
I used ½ tube of Muller light vanilla yoghurt per serving
Selection of fruit to serve

Pour the cream soda and rice into the slow cooker, split the vanilla pod and scrape out the seeds add the seeds and pod to the slow cooker, i set my slow cooker to 4 hours as that was my shortest high setting.
Stir every now and then.
I divided mine into 8 portions and each time i had one i stirred in ½ tube of yoghurt and a selection of fruit.
Best served cold.

  1. Hello :)

I just wanted to say that I *love* your blog, you have so many recipes and such lovely variety! I am a little surprised there are not more followers or comments, I think it may be due to people just not knowing it exists! I have pinned no less than 30 recipes probably.. and have already tried a handful which were all yummy.

Thank you for sharing and Keep it up :)

    1. Thank you very much for your kind comment. I don't have many followers that you can see, but i do get about 2 to 3 thousands hits a day.
I pin all the recipes i post and i also have a facebook page.
I'm so glad you have enjoyed the recipes x

  2. Do you have to use a slow cooker as i do not have one and how would it work without one?x

    1. Hi Jodie, I would do it on the stove in a large pan and let it simmer on a very low heat until the liquid is absorbed and the rice is cooked. Or maybe do it in a casserole dish in the oven for a couple of hours, again until the liquid is absorbed and the rice is cooked xx

  3. There is also a small portion version of this :) 100g pudding rice, 1 tin of sugar free cream soda and a muller light yogurt, just heat the cream soda in a saucepan, add the rice once the cream soda is simmering and leave to cook gently stirring occasionally until the rice is cooked, add the yogurt and eat :)

  4. Is cream soda, American? if not, what do I look for in supermarkets?

  5. Your find cream soda with all the other fizzy drinks, its clear, most supermarkets stock it, remember to make sure its sugar free x

  6. Its not syn free if using cream soda as its classed as a tweek

    1. As you may have noticed there is a warning about eating too much, as it may effect you weight. As i always say, if you are unsure about the syns always check with your consultant. Tweak or not, if it works for you, then enjoy!!!
