Mexican Salmon Stack



I normally make this dish with chicken, but i had run out so replaced it with salmon and it was just as good.
As you have probably noticed by now from all my recipes, i am very much into comfort food and this recipes fits that category very well.
With all the ingredients i have used this recipe isn't syn free, but the cheese and avocado are optional, although i will say they make the dish. You can use your healthy extra for the cheese. Avocado is 9.5 syns for 100g, which does seem a lot, but i think it is worth it as avocado is very good for you, full of vitamins and minerals, it also boosts your metabolism which is good for weight loss.



Pre heat oven 200c, 400f, gas mark 5

Ingredients

16oz salmon fillet
1lb maris piper potatoes diced
2 eggs
200g avocado sliced 19 syns
70g halloumi sliced  use your Healthy A or 25g is 4 syns
4 tbsp salsa click for recipe

Method

Spray a baking tray with frylight, lay out the diced potatoes in a single layer, spray with more frylight and season with salt and pepper. Bake for 30 minutes until golden tossing and spraying again half way through.
Roast the salmon fillet for 10 minutes seasoned with salt and pepper on a pan sprayed with frylight.
In a frying pan sprayed with frylight, fry the sliced halloumi until golden on both sides.
Fry the eggs in a frying pan sprayed with frylight.
Now layer the dish, lay the potatoes on the bottom, top with half the salmon fillet, lay the halloumi on top spoon on the salsa, add the avocado and top with a egg.

Spanish Hash



I love this dish, it is so versatile and goes with anything or just great by itself. Yet again another comforting dish!!
The cheese is optional, i used my healthy A or you can syn it. You can add anything you want to this, maybe some peppers, mushrooms or onions, as i said so versatile.
Best of all, all this flavour is syn free on extra easy!!

I also discovered that the tomato sauce, is great cold as a ketchup, my son loves ketchup, but this he couldn't get in his mouth quick enough, and the plus side is it's home-made so you know exactly what's in it and it's better for you.
Just keep it in the fridge.



Pre heat oven 200c, 400f, gas mark 5
This dish served 2 but were greedy.

Ingredients

1lb potatoes peeled if desired then cubed
4 eggs
60g goats cheese (optional)

Sauce Ingredients

1 onion chopped
4 cloves garlic chopped
1 red chilli chopped
1 tsp Italian seasoning
1 tin tomatoes
1 tbsp red wine vinegar
salt and pepper


Method

Spray a baking tray with frylight then lay out the potatoes and season and spray again. Roast in the oven for 30 minutes until golden, tossing and spraying half way through.

While the potatoes cook make the sauce.
In a blender blitz the onion, garlic and chilli. Fry in a pan sprayed with frylight for 2 minutes, then stir in the rest of the ingredients. Simmer for 15 minutes until the sauce has thickened to you liking. Then put it all back into the blender and blitz until smooth.

Pour into a seal-able container, you won't need all of it for this dish.

In a large oven proof pan, pour in the cooked potatoes, pour over as much sauce as you require, make 4 holes and crack in the eggs, add the cheese if using, then bake in the oven until the eggs are cooked to your liking, and serve. I served mine with Grilled chicken and a green salad.

Lemon Pepper Roasted Vegetables



There is nothing like a plate of roasted vegetables for a comfort food, full of super free and very filling. This meal is all cooked on one tray so very little washing up too!
You can use any vegetables you like.

Syn free on extra easy.



Preheat oven 200c, 400f, gas mark 5

Ingredients

3 large potatoes
1 large sweet potato
½ butternut squash
2 portobello mushrooms
10 asparagus
1 tbsp lemon pepper seasoning
salt
garlic frylight
2 8oz salmon fillets (optional)

Method

Chop the potatoes, butternut squash and sweet potato all the same size, thickly slice the mushrooms and cut the asparagus in half.
Spray a large baking tray with the frylight, lay the potatoes, sweet potato and butternut squash on the tray spray with frylight, sprinkle over the lemon pepper seasoning and season with salt. bake in the oven for 20 minutes, then toss them and spray again, bake for another 10 minutes, then toss in the asparagus and mushrooms, spray again and bake for 15 minutes.

I added 2 8oz fillets of salmon on top of the vegetables and baked for an extra 8 minutes, to make it a meal.

Homemade Crispy Potato Skins



BEWARE!! these are probably considered a tweak!!

I was making a chicken hash and decided to roast the peelings off the potatoes to make some crisps.
As you could eat a lot of them before they fill you up it may be a tweak, in which case they will be synful, but i don't know how you would syn them.
I figure as i was already eating the potatoes and i could have cooked them with the skins on and they would have been free, then to me these crisps are free, as it is only the amount from the potatoes i cooked. But the choice is yours!

Needless to say they were so good!!

Preheat oven 200c, 400f, gas mark 5

Ingredients

Potato peelings
garlic frylight
salt
1 tsp paprika

Method

Spray a baking tray with the frylight, lay the peeling in a single layer, spray with more frylight, sprinkle over the salt and paprika then roast for about 20 minutes or until they are crisp and golden.

Jalapeno and Coriander Rosti



I love potatoes and how versatile they are, but any potato that is fried is alway at the top of the list.
I love the kick from the spice and as coriander is my favourite herb it adds a delicious flavour.
The rostis go so well with chipotle yogurt and cajun salmon and a big salad!

They are syn free on extra easy.




Ingredients

1lb potatoes, i used maris piper
1 onion
1 tsp ground cumin
1 green chilli finely chopped
handful of coriander leaves chopped
1 egg beaten
salt and pepper


Method

Grate the potato and onion onto a clean tea towel, then squeeze out all the moisture, in a large bowl mix all the ingredients together.
In a large frying pan sprayed with frylight, flatten a spoonful of the mixture and fry for 3 minutes on each side until they are golden, transfer to a baking sheet, repeat until you have used up all the mixture. Spray with more frylight and bake for 15 minutes, until they are cooked through.

Corned beef Hash



Another dish you thought you couldn't eat while being on Slimming World!! Comfort food at it's best!!
Unfortunately it is not syn free, but it is low in syns, as the only syns are in the corned beef.

The whole dish is 4 syns.



Preheat oven to 200c, 400f, gas mark 5

Ingredients

1lb potatoes peeled and diced
1 tin lean corned beef 200g
1 onion finely chopped
1 tbsp tomato puree
1 tbsp worcester sauce
1 tsp smoked paprika
1 tsp cayenne pepper
2 fried eggs to serve.

Method

Lay the diced potatoes on a baking sheet sprayed with frylight and season and spray with more frylight, bake for 30 minutes, tossing and spraying again half way through.

In a frying pan sprayed with frylight, fry the onion until soft and golden, add the corned beef and fry till soft, add the tomato puree, worcester sauce, paprika and cayenne pepper, fry for 5 minutes, stirring often, add the potatoes to the pan and mix together, then serve with a fried egg on top.

Sweet Potato, Tomato and Potato Bake


This is a lovely side dish that will go with anything, i served it with my Thai Crab Cakes, but it would be great with Cajun Chicken, Roast Pork, or a steamed fish fillet.
Syn free on extra easy....

Preheat oven 200c, 400f, gas mark 5

Ingredients

1 large sweet potato sliced
1 lb maris piper potatoes sliced
3 large tomatoes sliced
1 large onion sliced
1 tsp mixed herbs
salt and pepper 

Method

Spray an ovenproof dish with frylight, lay the onion out on the bottom of the dish and layer the vegetables  on top like in the picture. Sprinkle over the herbs and salt and pepper. Cover with foil and bake for 30 minutes, then remove the foil spray again and bake for another 30 minutes.

Greek Lamb Hotpot


I really felt like making a Moussaka, but didn't want to use lots of syns on the sauce that goes with it, so i made a lamb ragu and layered it with potatoes and sprinkled with feta cheese, you can use aubergine too for the layers.
The feta cheese cuts through the richness of the lamb, without all the fat and syns.
 Its a cross between a Moussaka and Hotpot.

3.5 syns per portion on extra easy as long as you use the Feta as your healthy A, if not add 6 syns.


Serves 6

Preheat oven 200c, 400f, gas mark 5

Ingredients

2 garlic cloves finely chopped
1 large onion chopped
2 carrots finely diced
1 punnet cremini/chestnut mushrooms
1 kg less 16% fat minced lamb
1 tbsp dried mint
1 tbsp dried oregano
1 tbsp ground cinnamon
1 cinnamon stick
1 tsp chilli flakes
1 tin chopped tomatoes
500ml passata
1 tbsp tomato puree
500ml lamb or chicken stock
1 lb potatoes thinly sliced
Butter frylight
45g feta cheese per portion

Method

In a large pan sprayed with sunflower frylight brown the mince lamb then remove and set aside.
Fry the onions until they are soft and golden, add the garlic, carrots and mushrooms, fry for 3 minutes.
Return the lamb to the pan, add all the herbs and spices, stir together then add the tomatoes, passata, puree and stock, season with salt and pepper.
Bring to the boil then simmer for 2 hours stirring occasionally.
When the ragu is cooked, layer the ragu and potatoes in an oven proof dish, with ragu on the bottom and potatoes as the top layer, spray the top layer of potatoes with the butter frylight and bake for 40 minutes or until the potatoes are cooked through. If the top starts to get too brown cover with kitchen foil.
Serve up and sprinkle with the feta cheese.

Delicious served with a Greek Salad

Cajun Fries



Crispy on the outside fluffy in the middle with a kick from the cajun seasoning, who could ask for more from a fry!!

Syn free on extra easy.


Preheat oven 200c, 400f, gas mark 5

Ingredients

1 lb maris piper potatoes cut into large fries
1 tbsp cajun seasoning
½ tsp salt
frylight

Method

Spray a baking sheet with frylight, rinse off the fries and lay out on the baking sheet, spray with more frylight and sprinkle with the cajun seasoning and salt. Bake in the oven for 20 minutes, then turn the fries over spray again with frylight and bake for another 20 minutes.

Patatas Bravas / Sauteed Potatoes



I made this dish as an afterthought to go with the Baked Shrimp in Tomato Feta Sauce, normally i would serve it with a huge chunk of crusty bread, but as i'm now doing Slimming World and the bread would be lots of syns, i figured syn free sauteed potatoes would be better, and the base sauce for the Shrimp dish would make a great Patatas Bravas sauce!!

Syn free on Extra Easy.


Preheat oven 200c, 400f, gas mark 5

Serves 4 as a side dish or Tapas

Ingredients

1 lb maris piper potatoes peeled
2 tsp paprika
sprinkling of salt
1 portion of Base Tomato Sauce

Method

Chop the potatoes into 2cm cubes, lay out on a baking sheet sprayed with frylight spray them with more frylight then sprinkle with the paprika and salt, bake in the oven for 30 minutes, turning them half way through cooking and spraying with frylight again.

Serve them in a bowl with the Tomato Sauce poured over.

Baked Shrimp in Tomato Feta Sauce



This dish can be served as a main course, starter or as a small plate Tapas dish.
The base sauce also makes a great topping for Patatas Bravas, which is why i serves the sauteed potatoes with it.

Syne free on extra easy as long as the cheese is used as your healthy A.

45 g Feta cheese is the healthy A


Preheat oven to 200c, 400f, gas mark 5

Serves 4

Ingredients

1 medium onions finely chopped
2 garlic cloves finely chopped
2 red chillies finely chopped
2 tins of chopped tomatoes
A small handful of thai basil leaves roughly chopped or basic basil leaves if you prefer, i like the slight aniseed taste you get.
2 tsp dried oregano
2 lb large raw shrimp
salt and pepper
A pinch of sweetener
180g Feta cheese ( free if using as you healthy A, 6 syns on extra easy if not)
Salt and pepper to taste

Method

In a large pan sprayed with frylight, fry the onions till soft, add the chilli and garlic and fry for 30 seconds more.
Add the tomatoes and 1 tomato tin filled with water, sprinkle in the dried oregano, stir together then simmer for 30 minutes over a low heat till the sauce has thickened.
Add the shrimp, thai basil and feta, and salt and pepper to taste then transfer to an oven dish and bake for 10 - 15 minutes until the shrimp are cooked.
Serve with Sauteed Potatoes, rice or pasta.

I also served mine with a Greek Salad and little gem leaves.

For the Base sauce, follow the instructions through to the sauce thickening, this sauce can be used for so many things, like a pasta sauce, as mentioned the Patatas Bravas and Ratatouille.

New Potatoes with Coriander, Chilli and Mint Dressing



These potatoes with a light and citrusy dressing make a great accompaniment to fish, and chicken or are great in a salad.
Simple to make and syn free on extra easy.


Ingredients

1 lb new potatoes
1 handful coriander
10 mint leaves
1 tbsp sugar free mint sauce
juice of 1 lime
1 green chilli
pinch of sweetener

Method

Boil the potatoes till tender.

Blend all the other ingredients in a blender.
Mix the dressing with the potatoes and serve.

Syn Free Chips



How to make perfect syn free chips!

The type of potato is very important, and i always use Maris Pipers, they are always fluffy on the inside and crispy on the outside.


Preheat oven to 200c, 400f, gas mark 5

Ingredients

1 lb Maris Piper potato
sunflower frylight
salt
paprika

Method

Peel and cut the chips.
Parboil the chips till slightly tender, drain them and shake them up slightly to make them rough on the outside. let the dry out.

Spray a baking tray with the frylight, spread out the chips in a single layer and spray with frylight, then sprinkle with the salt and paprika. bake in the oven for 15 minutes then remove from the oven turn the chips and spray again with fry light, bake for another 15 minutes till golden and crispy.

Chicken Hash



This is pure comfort food!!

Who would have thought you could eat food like this on Slimming World!
Well you can and to top it off this meal is syn free on extra easy!
The cheese is your healthy extra A.


Serves 2

Ingredients

2 skinless, boneless chicken breasts  roasted with fry light for 20 minutes at 200c, 400f, gas mark 5.
1 lb maris piper potatoes, peeled and cubed, then roast for 30 minutes with fry light, turning and spraying again half way through.
1 onion chopped
8 oz mushrooms chopped
1 red pepper chopped
1 cup jalapenos
1 tbsp tomato paste
1 tbsp worcester sauce
2 tsp smoked paprika
Salt and pepper
2 eggs fried in fry light or poached
70g full fat cheddar or 90g half fat cheddar grated

Method

While chicken and potatoes are roasting fry the onion with fry light till soft, add the mushrooms and onions and fry for 2 minutes.
Add the jalapenos, tomato paste, worcester sauce, paprika and salt and pepper, cook out for 5 minutes.
Chop the chicken into cubes and add to the onion mixture, then stir in the potatoes, sprinkle over the cheese and melt in oven for 3 minutes.
Top with an egg and serve.
