Country Potato Salad



This potato salad is deliciously creamy and full of flavour, it is fab as a side dish, for a picnic, with a green salad, it is so versatile!!
It isn't syn free but it is so much better than any shop bought potato salad.
The amount of ingredients that i used made enough for 6 servings. The whole dish was only 4.5 syns on extra easy, so split that between 6 and it's next to nothing, and so worth it!!!!



Ingredients

2 lb new potatoes boiled until cooked and cooled
3 hard boiled eggs chopped
3 rashes of bacon with all the fat removed, fried and chopped
3 or 4 spring onions chopped
7 tbsp lighter than light mayonnaise
3 tbsp fat free natural yogurt
2 tsp wholegrain mustard
10 basil leaves chopped
salt and pepper to taste

Method

In a large bowl mix together the yogurt, mayonnaise, wholegrain mustard, salt and pepper, and basil. The gentle stir in the rest of the ingredients, being careful not to break them up. let them rest in the fridge for 30 minutes for all the flavours to infuse.

One Pan Brunch



If you don't want a lot of cleaning up and fancy a fry up this dish is just for you!!
I used 2 syns in this dish on the sausages. I used weight watcher sausages at ½ syn each.
But if you want it syn free just leave out the sausages. You can put whatever you want into it.



Ingredients

4 low fat sausages halved
6 rashers bacon with all the fat cut off
8oz mushrooms sliced
12 cherry tomatoes halved
2 eggs

Method

In a large pan sprayed with frylight cook the sausages, remove and set aside, fry the bacon remove cut in half and set aside, Fry the mushrooms until golden, add the tomatoes and return the sausages and bacon. fry for 1 minute then crack in the eggs, fry until they turn white then pop under a grill to cook the top to your liking.

Liver and Bacon Sauté with Roasted New Potatoes



This may not be a dish for everyone as a lot of people don't like liver, but personally I love it and would encourage you to try it!
There is so much flavour to this dish and it is very low in syns. As the whole pot is 1 syn on extra easy.



Preheat oven 200c, 400f, gas mark 5

Ingredients

1 lb new potatoes
4 spring onions sliced diagonally
2 thick bacon chops, all fat removed and diced, or 1 large gammon steak
2 tsp paprika
250g liver sliced
200ml hot vegetable stock
1 tsp flour 1 syn
salt and pepper
4 tbsp fat free natural yoghurt

Method

Halve the new potatoes and boil until tender, let them dry, then lay them on a baking tray sprayed with frylight and spray them again then roast for about 20 minutes until they are golden and crispy.
Meanwhile in a large pan fry the bacon until it is golden. Season the liver with the paprika, salt and pepper and stir in the flour. Add the liver to the pan and fry until cooked to your liking. Add the spring onions and potatoes to the pan to warm through. Then divide between 2 plates.
Add the stock to the pan and scrap all the brown bits from the bottom of the pan to make a very tasty gravy, pour over the meals, dollop 2 tbsps of yoghurt on top of each and sprinkle with coriander.

Chicken and Rosemary Casserole



I love the winter when all the one pot and warming comfort foods come out, just like this lovely chicken casserole, just what you need on a cold frosty night.
This is a cheats casserole though as it doesn't need hours of cooking.



Ingredients

4 chicken breasts roasted with rosemary
4 rashers of bacon with all fat cut off sliced
1 onion chopped
8oz mushrooms sliced
bunch of asparagus
600ml chicken stock
1 sprig rosemary finely chopped
1 tbsp flour 3.5 syns
½ tsp celery salt
fresh ground black pepper

Method

Fry the onions until they are soft, add the bacon and mushrooms and fry until golden, stir in the flour celery salt, pepper and rosemary and cook for 2 minutes, pour in the stock and bring to a boil, return to a simmer and add the asparagus and simmer for 20 minutes, until the asparagus is cooked and the sauce has thickened, and serve.

Syn Free Pate



I absolutely love pate, but never in a million years thought i could eat it on Slimming World. Thanks to Francesca Hayward for posting a recipe on a slimming group. I changed a few things and it came out delicious, considering there is no butter in the recipe it is rich, creamy and just like an ordinary pate.
It is completely syn free on extra easy too.....



Ingredients

500g mushrooms chopped
400g chicken livers chopped
1 garlic clove finely chopped
1 onion chopped
4 rashers bacon fat removed and chopped
1 tsp mixed herbs
2 tbsp of quark
salt and pepper

Method

In a large pan sprayed with frylight, fry the mushrooms till golden and set aside.
Re spray the pan and fry the onions till soft, add the garlic and mixed herbs and fry for 1 minute, then add the chicken livers and fry for 5 minutes, add the bacon and fry for 2 minutes. Let it cool down then blitz in a blender till smooth, mix in the quark and season to taste. Mix in the mushrooms and refrigerate.

Hunters Chicken


Cheese, bacon, BBQ sauce on top of a chicken breast, served with a large side of Cajun Fries, are you sure this is a meal you can eat on Slimming World???
Well don't worry because you can and it's only a couple of syns too!!!
I used the BBQ sauce recipe that is on this blog and the recipe made 5 portions.
I used 1½ portions of BBQ sauce per person with this meal, which worked out at 2¼ syns per person.


Preheat oven 200c, 400f, gas mark 5

Ingredients

2 boneless skinless chicken breasts
3 portions of Spicy BBQ Sauce (4.5 syns)
4 rashes of back bacon all fat removed
80g reduced fat cheddar (syn free if used as you healthy extra A)

Method

Put the chicken breasts in a foil lined baking tray sprayed with frylight. Cut a split down the middle of each breast and put ½ portion of BBQ sauce in each slit, cover with the bacon slices, 2 on each. Bake in the oven for 20 minutes, then sprinkle over the cheese and return to the oven until the cheese has melted.
Serve with Cajun Fries, a large salad and 1 portion of Spicy BBQ Sauce.

Cajun Bacon and Mushroom Cheeseburger


I already have a burger recipe on here, but i thought i would design a different flavoured one and add a few more toppings.
To say it went down well is an understatement, my husband went mad for them and they go so well with the cajun fries.

Makes 4 burgers

Ingredients

500g extra lean mince beef (5% or less)
2 tsp Worcester sauce
½ tsp garlic salt
½ tsp freshly ground black pepper
3 tsps cajun seasoning
2 onions sliced
4 rashers of bacon fat cut off
8 open cup mushrooms
4 small wholemeal rolls
4 slices of low low toastie cheese

Method

Mix together the beef, worcester sauce, garlic salt, 1 tsp of the cajun seasoning and pepper, make into 4 patties and chill for 30 minutes.

Heat a frying pan with frylight and fry the onions over a medium low heat until they are soft and golden for about 40 minutes.
In another pan sprayed with frylight cook the bacon and mushrooms, set aside and keep warm.
Wipe out the pan and spray with frylight again and brown the rolls on the insides.
Sprinkle the patties with the remaining cajun seasoning and fry the patties for 3 minutes, don't move or fiddle with the patties until they are to be turned over. Once you have turned them, cover them with a bowl to steam for 2 minutes then top the patties with a slice of cheese, cover again till the cheese has melted.
Put a layer of the caramelised onions on the bottom of the roll and add 2 mushrooms, top with the patty then the bacon and put the lid of the roll on, repeat with the rest of the burgers. Serve with synfree cajun fries.
